chilled cucumber soup

Eating cool foods helps to against heat accumulation in the summer. Cucumber and mint both cooling and fresh. A great way to enjoy lunch on a hot summer day.

Serves: 4-6
Preparation time: 10min

Ingredients:
4 cups cucumber, chopped
2 cups water or broth
1 cup oatmeal yogurt (or plain organic yogurt)
1 clove garlic (optional)
Several fresh mint leaves
tsp sea salt
tsp dill

Method:
Puree everything in the blender. Serve chilled.
