Cooking time: 10 minutes
Olive or coconut oil
2 medium to large zucchinis, halved lengthwise
1 tablespoon olive oil
Sea salt and fresh ground black pepper
3 cloves fresh garlic, crushed
2 teaspoons chopped fresh thyme leaves
Preheat oven to 450 degrees F.
Lightly coat a large baking sheet or glass baking dish with olive or coconut oil.
Arrange zucchini halves, flesh side up, on prepared baking sheet.
Drizzle olive oil over zucchini.
Season the zucchini with salt and black pepper. Evenly sprinkle crushed garlic and thyme over top.
Roast 8 to 10 minutes, until tender and golden brown.
