simple baked apples

Baked apples are homey and relaxing. Enjoy as a breakfast, snack or dessert. Great to serve to guests in the cold winter.

Serving size: 6

Cooking time: 30 - 45minutes

6 organic apples (Granny Smith are best – the green sour ones)
1 tsp ground cinnamon
½ tsp ground nutmeg (optional)
¼ tsp ground clove (optional)
1 tsp pure vanilla extract
1 tbsp maple syrup or honey (optional)
½ cup organic apple juice/cider
½ cup chopped walnuts or pecans
½ cup chopped organic unsulfured dried fruit
(raisins, apricots, prunes, dates, figs)

Preheat oven to 350 degrees F (175 degrees C).

Wash apples thoroughly. Remove core from apples. In a small bowl, mix together maple syrup, flour, cinnamon, nutmeg and cloves. Add in nuts & dried fruits. Spoon mixture into hollow in apple. Press down and fill. Pour apple juice evenly over apples (use enough to just cover the bottom of the dish).

Bake uncovered in preheated oven for 30 - 45 minutes (until apples are tender). Baste with juice occasionally. Spoon any remaining juices over apples. Place on serving platter. Serve warm.
